We deeply enjoyed staying at the Hillbrook. It was perfectly quiet and amazingly relaxing. The facilities were comfortable and a charmingly rustic.. it was nice to be in such a quiet intimate space, with so limited guests you felt like you were alone most of the time. The main facility an a lovely old home, meandering and rustic, yet a classic old estate kind of feel. Let me say, as nice as everything was, it was the staff which truly elevated the experience. Christian handled everything from check in, to bar service, to waiter, to tending to tending the bonfire outside. His personality and astounding energy were spectacular. Trevor was our waiter for dinner and he made everything tremendous. But, I would say he was one of a true team of professionals. For a quiet, small out of the way Inn and Spa, the service was on par with any high end restaurant. They are truly amazing I would say, my only disappointment was with the chefs menu. It was not about the cost and the wine pairing was great, but the Waygu beef was not good. Under cooked and buried in sauce, masking and ruining what should have been the highlight of the meal. The scallops were a bit under poached, but okay…. For under poached. Breakfast was warm and extremely comfortable. Not a huge menu, but the one thing I wanted the most was poorly prepared. Again, on the whole, I loved the short walk on the gravel path to a small intimate dining experience. The one dining experience was very expensive and not good. I want to go back, looking forward to trying on of the other lovely suites or cottage rooms. Other than a meal correction, I cannot wait to relax again Thanks Christian and Trevor. Great job JW
